Denham Estate Venison

The Denham Estate is abundant with history for many reason, from the ruins of Denham Castle to the old apple orchards there’s a story to be told in every corner of the estate. Of course our favourite part, is the history of the Denham Estate fallow deer herd. The estate was once a home to the biggest fallow farm in Europe it over 3000 head at its peak. The lines for breading were carefully selected to result in a prestigious venison that was held in high respect by top chefs from The Ritz, The Savoy and many more well-known establishments across the country. 

In October 2021 we were very lucky to take over this stunning herd of 300 fallow deer, with lines that still produce the venison that made it so sort after in the 90’s. The herd has now been reclassified as Park Deer or enclosed wild deer. This means with can produce the same amazing venison, just as consistently as farmed but without the intensity or need for intervention. There are no fertilisers used on the pastures nor do we use antibiotics or growth enhancers.

Although we are keen deer stalkers and fully support the need for deer management which we do regularly, we have found that we cannot always guarantee the high end, consistent venison you will see from our herd.

As our deer are now classified as Park Deer, this enables us to manage them as we would in the wild, avoiding the unnecessary stress of being sent to the abattoir. Avoiding this stress allow us to put the welfare of the deer first and really look after the venison in the process. The process is done start to finish by ourselves which results in there being less than 1 food mile on our venison.
